Summer Recipe Roundup: 6 Family-Friendly Meals

Summer is probably my ideal season for cooking. With so many different fruits and veggies, longer days and numerous poolside parties or family gatherings, the opportunities for delicious dishes are endless!

One of my favorite things to do with my kids over the summer is to take a Saturday morning trip to the farmers market in Murfreesboro. I love letting the kids pick out fruits and veggies, then finding or creating meals based off of what they choose. So, I wanted to share a selection of our favorites, which includes a few twists on summer classics!

  • 1. Charred Zucchini Sweet Corn Mexican Salad from Whole and Heavenly Oven

    This grilled zucchini and corn Mexican salad is one of my preferred side dishes. We love pairing this with grilled shrimp. I have used the same dressing for this salad as a marinade for the shrimp!

  • 2. Fajita Chicken Kebabs from Well Plated

    A twist on fajitas, these chicken kebabs are another favorite. Grilling bell peppers brings out their sweet flavor, and I love caramelized onions. I also enjoy adding button mushrooms to this one. Instead of wrapping these in tortillas, consider making brown rice or quinoa bowls.

  • 3. Balsamic Chicken Kabobs from Joyful Healthy Eats

    Continuing with our grilling theme, this recipe for balsamic chicken kabobs goes great with wild rice or roasted red potatoes. Using similar ingredients as the fajita version, but different seasoning/marinades, means you can prepare both in the same week. Grab yourself some bell peppers, zucchini, and red onion for these!

    It wouldn’t be summer without watermelon! Here’s a simple, delicious salad recipe that’s great to bring to barbeques or potlucks. It’s both sweet and savory. Yum!

    And it wouldn’t be summer without an occasional dessert! We love fruit-based desserts at our house. This recipe for blueberry peach cobbler is a definite winner. And this healthier twist on an old classic doesn't sacrifice taste.

  • 6. Banana Split Bites from MOMables

    Lastly, this recipe is a favorite with my kids. We love dipping summer fruits in dark chocolate and drizzling with peanut butter or topping with chopped peanuts or sprinkles. Feel free to experiment with your favorite fruits or toppings for a great summer treat.
