Tyonna's Lemon Pepper Chicken

Since 2012, the Robertson County Family YMCA has served 45 Springfield Middle School students annually through Y-CAP.  Referred to us by the school system, we help these students overcome the challenges they face and obtain the life skills they need to succeed.  Among the goals of the program is to teach life-skills through hands-on activity and caring relationships with staff, volunteers, and participants. 

Tyonna is one of those participants, and she recently approached the Y-CAP staff about preparing a meal she had never prepared before:  lemon pepper chicken and garlic potatoes.  Tyonna researched various recipes and came up with her own variation, and with the help of the Y-CAP staff went to the grocery store to purchase the ingredients.

Setting up shop at J and G's Kitchen inside the Robertson County Y, Tyonna prepared the meal for other Y-CAP participants.  Her first big meal preparation was a huge success.

"Tyonna has been so eager to try new things since she began our program over two years ago," says Y-CAP director Jim Ring.  "She has really developed into a great young woman and her talents for the culinary arts has really transformed into a passion. We are so thankful to have Tyonna’s personality and smile at Y-CAP."

Tyonna's Lemon Pepper Chick and Garlic Potatoes


  • Chicken breasts or tenders
  • Potatoes (variety is optional)
  • Lemon Pepper seasoning
  • Garlic and herb seasoning
  • Water
  • 1 Lemon
  • Salt to taste 


  • Preheat oven to 350 F.
  • Peel potatoes, wash, and cut in cubes. Season with salt and Garlic and herb seasoning. Set aside.
  • Rinse off chicken, cut large chicken breasts in half width-wise. Cut each half in half again so that you get 4 tenders per breast. Season with salt and Lemon Pepper seasoning.
  • Place seasoned chicken and potatoes in a large deep dish pan and add enough water to cover the bottom of the pan (not covering the chicken or potatoes). Squeeze the juice of one lemon over the chicken and potatoes. Cook in the oven until potatoes are tender and chicken reaches 170 F.
